Feed the Starter: On the second day and every subsequent day, discard half of the starter (about 120g), and add another 120g of flour and 120g of water. Mix well and cover again. This feeding process provides fresh food for the yeast and helps grow a robust starter.

Observe the Bubbles: Continue the feeding process once a day. You should see significant bubbling and growth within 5 to 7 days. Your starter is ready for baking when it doubles in size within 4 to 6 hours of being fed and has a pleasantly sour aroma.

Store or Use: Once your starter is active and bubbly, you can store it in the fridge if not in use, feeding it every week. You can also choose to keep it at room temperature, feeding it daily.
