1 lb large shrimp, peeled and deveined

2 cups broccoli florets

1 cup cauliflower rice (or substitute with actual rice)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving

Prepare the Broccoli Rice: In a food processor, pulse the broccoli florets until they resemble rice grains. Set aside.

    Cook the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, paprika, salt, and pepper. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.

      Make the Broccoli Rice: In the same skillet, add an additional 2 tablespoons of butter. Add the broccoli rice and cauliflower rice (if using), and sauté for 5-7 minutes until tender. Stir in the lemon juice and season with salt and pepper.

        Combine: Return the cooked shrimp to the skillet and toss everything together. Heat for an additional minute to combine flavors.

          Serve: Plate the broccoli rice and top with garlic butter shrimp. Garnish with fresh parsley and serve with lemon wedges on the side.
