2 large ripe mangoes, peeled and diced

2 cups fresh strawberries, hulled and halved

1/2 cup granulated sugar (adjust to taste)

1/4 cup freshly squeezed lime juice

1 cup coconut water (or regular water)

A pinch of salt

Prepare the Fruits: Start by washing the strawberries thoroughly. Hull and halve them, setting them aside in a bowl. Next, peel and dice the mangoes, placing them in another bowl.

    Blend Ingredients: In a blender or food processor, combine the diced mangoes, halved strawberries, sugar, lime juice, coconut water, and a pinch of salt. Blend the mixture until it is smooth and creamy. Taste and adjust the sweetness with more sugar if needed.

      Chill the Mixture: Pour the blended fruit mixture into a container and cover it with a lid. Place it in the freezer for about 1-2 hours, or until it’s partially frozen and thickened.

        Churn the Sorbet: Once the mixture is partially frozen, take it out of the freezer. Use a fork to scrape and fluff the mixture, then transfer it back into the blender or food processor. Blend again until it's smooth. This step will make your sorbet fluffy.

          Final Freeze: Transfer the blended mixture into an airtight container. Freeze for another 4-6 hours, or until completely firm.

            Serve: Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly. Scoop the sorbet into bowls and garnish with fresh mint leaves if desired.
