Ingredients
Scale
- 1/2 cup low-fat or whole milk cottage cheese
- 2 large eggs
- 1/2 cup rolled oats (old-fashioned or quick oats)
Instructions
- Place the cottage cheese, eggs, and rolled oats into a high-speed blender or food processor. Blend on high for about 30 to 45 seconds until the batter is completely smooth and no oat chunks remain. Let the batter sit for 2 minutes while you heat your pan; this allows the oats to hydrate, which results in a fluffier pancake.
- Heat a non-stick skillet or griddle over medium-low heat. Lightly coat the surface with cooking spray or a tiny bit of butter. Pour about 1/4 cup of batter for each pancake onto the hot surface. Cook for 2 to 3 minutes until small bubbles form on the edges and the bottom is golden brown. Carefully flip the pancakes and cook for another 1 to 2 minutes on the other side.
- Stack the warm pancakes on a plate. Top them with your favorite healthy additions like fresh berries, a dollop of Greek yogurt, or a drizzle of pure maple syrup. Serve immediately while they are hot and tender.
- Cook Time: 15 minutes
