Ingredients
Scale
- 1/2 cup Low-fat or 2% Cottage Cheese
- 1/2 cup Rolled Oats (Old-fashioned or quick oats work well)
- 2 Large Eggs
- Optional: 1/2 tsp Vanilla extract or a pinch of Cinnamon for flavor
Instructions
- Step 1: Preparation Start by preheating your waffle iron to a medium-high setting. While the iron heats up, place the cottage cheese, oats, and eggs into a high-speed blender or food processor. Blend the ingredients on high for about 30 to 45 seconds until the mixture is completely smooth. If you prefer a bit of texture, you can pulse it briefly, but a smooth batter yields the fluffiest results. Let the batter sit for 2 minutes; this allows the oats to soak up the liquid, resulting in a thicker consistency.
- Step 2: Cooking Generously coat your waffle iron with non-stick cooking spray or a small amount of melted butter. Pour the batter onto the center of the hot iron, being careful not to overfill it. Close the lid and cook for about 4 to 6 minutes. Avoid the temptation to open the lid too early, as the steam needs to escape to make the waffles crispy. Once the steam stops rising and the exterior is golden brown, carefully remove the waffles with a silicone spatula.
- Step 3: Plating Stack your warm waffles on a plate. Top them with your favorite healthy additions like fresh berries, a dollop of Greek yogurt, or a drizzle of sugar-free maple syrup. For an extra protein boost, add a tablespoon of almond butter or peanut butter. Serve immediately while they are hot and crispy for the best eating experience.
