Ingredients
Scale
- 1 slice of thick-cut sprouted grain or sourdough bread
- 1/2 ripe avocado
- 2 large eggs (hard-boiled for make-ahead, or poached/fried for immediate serving)
- 1 teaspoon lemon or lime juice
- 1/2 teaspoon Everything Bagel seasoning
- A pinch of red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Toasting the Bread: Place your bread slice in a toaster or toaster oven. Toast it until it reaches a deep golden brown. A firmer toast provides a sturdy base for the heavy avocado and egg toppings, preventing the bread from becoming soggy.
- Preparing the Avocado Mash: While the bread toasts, scoop the flesh of half an avocado into a small bowl. Add the lemon juice, a pinch of salt, and black pepper. Mash the mixture with a fork until it reaches your desired consistency—either chunky or completely smooth. The lemon juice adds zest and prevents the avocado from browning if you are prepping this slightly ahead of time.
- Preparing the Eggs: If you are making this fresh, fry or poach your eggs to your liking. For the make-ahead weight loss version, peel two pre-boiled eggs and slice them into thin rounds or halves. Hard-boiled eggs are the best choice for portability and meal prepping for the week.
- Assembling and Seasoning: Spread the avocado mash generously over the toasted bread. Top with the sliced eggs. Sprinkle the Everything Bagel seasoning and red pepper flakes over the top. Serve immediately while the toast is still warm and crunchy.
- Cook Time: 5 minutes
