5 Minute High Protein Bagel Sandwich Make Ahead School Morning Easy

  • Total Time: 5 minutes
  • Diet: High Protein

Ingredients

Scale
  • 1 High-protein or whole-wheat bagel
  • 2 Large eggs (or 1/2 cup egg whites for leaner protein)
  • 1 Slice of sharp cheddar or provolone cheese
  • 2 Slices of turkey bacon or 1 pre-cooked turkey sausage patty
  • A handful of fresh baby spinach
  • Salt and pepper to taste
  • Optional: A thin spread of cream cheese or mashed avocado

Instructions

  1. Slice your bagel in half. If you are eating it immediately, toast it to your desired crispness. If you are making this to freeze or refrigerate for later, leave the bagel untoasted to prevent it from becoming too tough when reheated. Whisk your eggs in a small, microwave-safe bowl that is roughly the same diameter as your bagel. Season the eggs with a pinch of salt and pepper.
  2. Place the bowl of eggs in the microwave and cook for about 60 to 90 seconds until the egg is set and fluffy. While the egg cooks, heat your turkey bacon or sausage patty in a skillet or the microwave until hot and slightly crispy. If you are using fresh spinach, you can place it on top of the hot egg for the last 10 seconds of cooking to let it wilt slightly.
  3. Layer the bottom half of the bagel with the egg patty, followed by the cheese slice, the breakfast meat, and the spinach. Place the top of the bagel on. If eating now, the heat from the egg will melt the cheese perfectly. If making ahead, let the sandwich cool completely before wrapping it tightly in parchment paper and then aluminum foil. Store in the fridge for up to 3 days or the freezer for up to a month.
