Ingredients
Scale
- 8 large flour tortillas (burrito size)
- 8 large eggs
- 1 cup liquid egg whites
- 1 lb lean ground turkey sausage or chicken sausage
- 1 cup low-fat shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup mild salsa (drained of excess liquid)
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional: Fresh cilantro or chopped spinach
Instructions
- Step 1: Preparation – Start by gathering all your ingredients and equipment. Place a large non-stick skillet over medium heat. While the pan warms up, crack the eggs into a large bowl and whisk them together with the liquid egg whites, garlic powder, salt, and pepper. Set the tortillas aside and ensure they are at room temperature so they are pliable and won’t tear during the rolling process. If you are using frozen sausage, ensure it is fully thawed before you begin.
- Step 2: Cooking – Add the ground turkey sausage to the skillet and cook until browned and fully cooked through, breaking it into small crumbles with a spatula. Remove the sausage from the pan and set it aside on a plate lined with a paper towel to absorb any excess moisture. In the same skillet, pour in the egg mixture. Scramble the eggs over medium-low heat until they are just set but still slightly moist. Do not overcook them, as they will cook further when you reheat the burritos. In the final minute of cooking, stir in the drained black beans and the cooked sausage to incorporate everything evenly.
- Step 3: Assembly and Freezing – Lay out the tortillas on a clean surface. Distribute the egg and meat mixture evenly across the center of each tortilla. Sprinkle a generous tablespoon of cheese over the hot filling so it begins to melt and act as a “glue.” Top with a teaspoon of drained salsa. Fold the sides of the tortilla inward, then roll from the bottom up, tucking the filling tightly. Wrap each burrito individually in parchment paper followed by a layer of aluminum foil. Place all wrapped burritos into a large freezer-safe Ziploc bag, squeeze out the air, and store them in the freezer for up to 3 months.
