Ingredients
Scale
- 1 Whole wheat English muffin or high-protein bagel thin
- 2 Slices of lean Canadian bacon or pre-cooked turkey sausage patties
- 1 Slice of sharp cheddar cheese or provolone
- 1 Tablespoon plain Greek yogurt (used as a high-protein spread)
- 1 Teaspoon dijon mustard or honey mustard (optional)
- A few fresh spinach leaves or cucumber slices for crunch
Instructions
- Split your English muffin or bagel thin in half. In a small bowl, mix the plain Greek yogurt with the mustard to create a tangy, high-protein spread. Apply this mixture generously to the bottom half of the muffin. This adds moisture and extra protein without the empty calories of traditional mayonnaise.
- Layer the Canadian bacon or turkey sausage patties onto the bottom half of the muffin. Place the slice of cheese directly over the meat. If you are eating immediately, place the sandwich halves in a toaster oven or air fryer for 3 minutes at 350°F until the cheese is bubbly and the meat is heated through. For a faster option, use the microwave for 45 seconds.
- Add your fresh greens like spinach or cucumber on top of the melted cheese. Close the sandwich with the top half of the muffin. Slice the sandwich in half to make it easier for kids to handle. Serve immediately while warm, or wrap it in foil for a grab-and-go breakfast.
- Cook Time: 5 minutes
