Ingredients
Scale
- 4 large eggs
- 1 cup low-fat cottage cheese
- 1/2 cup shredded sharp cheddar cheese
- 4 strips of cooked bacon, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1 tablespoon chopped chives or green onions
- Non-stick cooking spray
Instructions
- Start by gathering all your ingredients. Place the 4 eggs, 1 cup of cottage cheese, salt, and pepper into a high-speed blender or food processor. Blend on high for 20-30 seconds until the mixture is completely smooth and airy. If you prefer a chunky texture, you can whisk them by hand, but blending creates that signature velvety “Starbucks” style finish.
- Lightly grease a silicone egg bite mold that fits your air fryer basket with non-stick cooking spray. Evenly distribute the crumbled bacon and half of the shredded cheddar cheese into the bottom of each silicone cup. Pour the egg and cottage cheese mixture over the toppings until each cup is about 3/4 full. Sprinkle the remaining cheese on top for an extra cheesy crust.
- Place the silicone mold into the air fryer basket. Set the air fryer to 300°F (150°C) and cook for 12 to 15 minutes. Check them around the 12-minute mark; they are done when the centers are set and no longer jiggle. Carefully remove the mold from the air fryer and let the bites cool for 2-3 minutes before popping them out of the silicone cups. Serve warm and enjoy your high-protein breakfast!
