Ingredients
Scale
- 1 thick slice of Sourdough or sprouted grain bread
- 1/2 cup small curd cottage cheese (full-fat or 2% works best)
- 1 large egg (optional, for a custard-like texture)
- 1/4 teaspoon garlic powder (for savory) or cinnamon (for sweet)
- A pinch of sea salt
- Optional toppings: Hot honey, everything bagel seasoning, or sliced tomatoes
Instructions
- Start by choosing a sturdy piece of bread. Sourdough is ideal because it holds up well under the weight of the toppings. In a small bowl, mix the cottage cheese with one egg. Adding the egg creates a “custard toast” effect that is incredibly popular and adds an extra 6 grams of protein. If you prefer a simpler version, you can skip the egg and just use the cottage cheese seasoned with salt and garlic powder. Use a spoon to press down the center of the bread slice slightly to create a small well for the mixture.
- Carefully pour or spoon the cottage cheese mixture into the center of your bread slice. Spread it out, but leave a small border around the edges to prevent it from spilling over. Place the toast into the air fryer basket. Set your air fryer to 375°F (190°C) and cook for 6 to 8 minutes. You will know it is done when the cottage cheese looks set and the edges of the bread are a beautiful golden brown.
- Use a spatula to gently remove the toast from the air fryer. Let it sit for about 60 seconds; this allows the “custard” to firm up slightly so it doesn’t run when you bite into it. Now comes the fun part: toppings! For a savory vibe, sprinkle on some everything bagel seasoning and a drizzle of hot honey. For a sweet version, top with fresh berries and a squeeze of maple syrup. Serve immediately while warm.
