Ingredients
Scale
- 1/2 cup low-fat or 2% cottage cheese
- 1 large egg
- 1/4 cup oat flour (blended rolled oats)
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 teaspoon maple syrup or stevia (optional)
- Pinch of salt
- Non-stick cooking spray (avocado or coconut oil)
Instructions
- Step 1: Blend the Batter: Place the cottage cheese, egg, oat flour, baking powder, vanilla extract, sweetener, and salt into a high-speed blender or food processor. Blend on high for about 30 to 45 seconds until the mixture is completely smooth and no cottage cheese curds remain. Let the batter rest for two minutes to allow the oat flour to hydrate, which results in a fluffier waffle.
- Step 2: Prepare the Air Fryer: Place your silicone waffle molds into the air fryer basket. Lightly spray the molds with non-stick cooking spray to ensure easy release. Preheat your air fryer to 360°F (180°C) for two minutes. Pour the batter into the molds, filling them about 3/4 of the way full to allow for rising.
- Step 3: Air Fry and Flip: Slide the basket into the air fryer and cook at 360°F for 8 minutes. Carefully remove the basket and check for firmness. If you want extra crispiness, carefully pop the waffles out of the silicone molds directly onto the air fryer tray and cook for an additional 2 minutes. This allows the air to circulate around the entire waffle.
- Step 4: Plating: Remove the waffles from the air fryer using tongs. Plate them immediately while they are hot. Top with fresh berries, a dollop of Greek yogurt for even more protein, or a drizzle of sugar-free maple syrup. Serve immediately for the best texture.
- Cook Time: 15 minutes
