Air Fryer Egg Bites Cottage Cheese High Protein Easy 20g+

  • Total Time: 17 minutes
  • Diet: Gluten-free, low-carb

Ingredients

Scale
  • 4 large eggs
  • 1/2 cup low-fat or whole milk cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • Optional: 2 slices cooked bacon (crumbled) or 1/4 cup chopped spinach
  • Non-stick cooking spray

Instructions

  1. Place the eggs, cottage cheese, salt, and pepper into a blender or food processor. Blend on high for 20-30 seconds until the mixture is completely smooth and aerated. If you do not have a blender, whisk the eggs vigorously and then stir in the cottage cheese, though the texture will be slightly chunkier. Lightly grease four to six silicone egg bite molds or ramekins with non-stick cooking spray to ensure easy removal.
  2. Stir the shredded cheddar cheese and any optional mix-ins, like bacon or spinach, into the egg mixture. Pour the liquid evenly into your prepared silicone molds, filling them about 3/4 of the way to allow for rising. Place the molds into the air fryer basket. Set the air fryer to 300°F (150°C) and cook for 12 to 15 minutes. Check them at the 12-minute mark; they should be set in the center and slightly golden on top.
  3. Carefully remove the basket from the air fryer and let the egg bites rest in the molds for 2 to 3 minutes. This resting period allows them to firm up so they pop out easily. Use a spoon or a small spatula to gently loosen the edges and lift them onto a plate. Serve immediately while warm, or store them in an airtight container for a quick breakfast later in the week.
