Ingredients
Scale
- 1 thick slice of sourdough or sprouted whole-grain bread
- 1/2 cup low-fat or 2% cottage cheese
- 1 small egg yolk (optional, for extra creaminess and binding)
- 1/2 teaspoon Everything Bagel seasoning
- 1/4 teaspoon garlic powder
- Fresh chives or parsley for garnish
- Red pepper flakes (optional for heat)
- A drizzle of honey or balsamic glaze (optional)
Instructions
- Begin by preheating your air fryer to 375°F (190°C). In a small mixing bowl, combine the cottage cheese, egg yolk, garlic powder, and half of the Everything Bagel seasoning. If your cottage cheese is very watery, strain it through a fine-mesh sieve for a minute before mixing. Stir the ingredients until they are well incorporated. The egg yolk helps the cottage cheese “set” during the cooking process so it does not slide off the bread.
- Place your slice of bread on a clean surface. Use a spoon to spread the cottage cheese mixture evenly across the bread, going all the way to the edges. Press down slightly in the center of the bread with the back of the spoon before adding the cheese to create a small well; this prevents the topping from overflowing. Sprinkle the remaining seasoning on top.
- Carefully place the assembled toast into the air fryer basket. Air fry at 375°F for 7 to 9 minutes. You want the edges of the bread to be golden brown and the cottage cheese mixture to look slightly puffed and set. Check it at the 6-minute mark to ensure the bread is not browning too quickly, as every air fryer brand has slightly different power levels.
- Use a spatula to remove the toast from the air fryer. Let it sit for one minute to allow the cheese to firm up. Garnish with fresh chives, red pepper flakes, or a light drizzle of honey if you prefer a sweet and salty combo. Slice the toast diagonally and serve immediately while hot.
