Beef Chili Casserole Ground Beef Easy Cheesy Family Make Ahead Feed Crowd

  • Total Time: 45 minutes
  • Diet: Gluten-Free

Ingredients

Scale
  • 2 lbs Lean Ground Beef
  • 1 large Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 can (28 oz) Diced Tomatoes, undrained
  • 1 can (15 oz) Kidney Beans, rinsed and drained
  • 1 can (15 oz) Black Beans, rinsed and drained
  • 1 cup Frozen Corn
  • 1 box (8.5 oz) Cornbread Mix (plus ingredients required on box)
  • 2 cups Shredded Sharp Cheddar Cheese
  • Salt and Pepper to taste
  • Optional toppings: Sour cream, sliced jalapeños, green onions

Instructions

  1. Preheat your oven to 375°F (190°C). In a large skillet or Dutch oven over medium-high heat, add the ground beef and diced onions. Cook until the beef is fully browned and the onions are translucent, breaking up the meat with a wooden spoon as it cooks. Drain any excess grease from the pan. Stir in the minced garlic and cook for another 60 seconds until fragrant.
  2. Add the chili powder, cumin, smoked paprika, salt, and pepper to the beef mixture. Stir well to coat the meat in spices. Pour in the diced tomatoes (with their juices), kidney beans, black beans, and frozen corn. Bring the mixture to a gentle simmer and let it cook for about 5 to 7 minutes. This allows the flavors to meld together. Pour the chili mixture into a lightly greased 9×13 inch baking dish.
  3. In a separate bowl, prepare the cornbread mix according to the package instructions. Stir half of the shredded cheddar cheese into the cornbread batter. Spread the batter evenly over the top of the beef chili mixture in the baking dish. Sprinkle the remaining cheese over the top. Place the dish in the oven and bake for 20 to 25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center of the topping comes out clean.
  4. Remove the casserole from the oven and let it rest for 5 minutes before serving. This allows the chili layer to set slightly. Scoop generous portions into deep bowls or onto plates. Garnish with a dollop of sour cream, fresh green onions, and jalapeños if you like a bit of extra heat. Serve warm and enjoy!
