Ingredients
Scale
- 1/2 cup old-fashioned rolled oats (certified gluten-free if needed)
- 2/3 cup unsweetened almond milk or milk of choice
- 1/4 cup non-fat Greek yogurt or coconut yogurt
- 1 tablespoon chia seeds
- 1/2 teaspoon vanilla extract
- 1 teaspoon honey or pure maple syrup (optional)
- 1/2 cup fresh strawberries, sliced
- A pinch of salt
Instructions
- In a glass jar or a small bowl, combine the rolled oats and chia seeds. Pour in the almond milk and the Greek yogurt. The chia seeds are essential here as they absorb liquid and create a thick, pudding-like consistency that makes the bowl incredibly satisfying.
- Add the vanilla extract, a tiny pinch of salt to enhance the sweetness, and your choice of liquid sweetener. Stir the mixture vigorously with a spoon until all the ingredients are well incorporated and no dry clumps of oats remain at the bottom.
- Gently fold in half of the sliced strawberries. If you are using a jar, you can press some strawberry slices against the side of the glass for that “beautiful” aesthetic. Place the remaining strawberries on top of the mixture. This ensures you get a burst of fresh fruit in every single spoonful.
- Seal the container with a lid or plastic wrap and place it in the refrigerator. Let the oats soak for at least 4 hours, though overnight is best for the creamiest results. In the morning, give it a quick stir, add an extra splash of milk if you prefer a thinner consistency, and enjoy cold.
- Cook Time: 5 minutes (plus overnight chilling)
