Brookie Bars Espresso Brownie Batter Easy Fudgy Chewy Cakey Classic Stuffed Creative Chocolate Tested Daily

  • Total Time: 50 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • For the Brownie Layer:
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons instant espresso powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • For the Cookie Layer:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease any exposed pan surfaces with butter or non-stick cooking spray.
  2. In a medium bowl, whisk together the melted butter, granulated sugar, and cocoa powder until smooth. Stir in the eggs one at a time, followed by the vanilla extract and espresso powder. Gently fold in the flour and salt until just combined. Pour the brownie batter into the prepared pan and spread it into an even layer.
  3. In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. In a small bowl, whisk the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients. Fold in the chocolate chips until evenly distributed.
  4. Take small handfuls of the cookie dough and flatten them slightly with your palms. Place these “discs” of dough over the top of the brownie batter until most of the surface is covered. It is okay if some brownie batter peeks through; this creates a beautiful marbled effect as they bake.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Do not overbake, as the bars will continue to firm up while cooling. Allow the bars to cool completely in the pan before lifting them out by the parchment paper and slicing into 16 squares.
