Ingredients
Scale
- For the Brownie Base:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- For the Cookie Dough Topping:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 tablespoons milk or heavy cream
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (heat-treated)
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper for easy removal. In a medium bowl, whisk together the melted butter and 1 cup of sugar. Add the eggs and 1 teaspoon of vanilla, beating well until the mixture is smooth. Sift in the cocoa powder, 1/2 cup flour, and salt. Fold the dry ingredients into the wet ingredients until just combined. Pour the batter into the prepared pan and spread it evenly.
- Place the pan in the center rack of the oven. Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Do not overbake, as you want the base to remain fudgy and chewy. Remove the pan from the oven and let the brownies cool completely. This is a crucial step; if the brownies are warm, the cookie dough topping will melt.
- While the brownies cool, heat-treat your flour by microwaving it in 30-second intervals until it reaches 160°F to ensure it is safe to eat. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Stir in the milk and vanilla. Gradually add the heat-treated flour and mix until a dough forms. Fold in the mini chocolate chips.
- Once the brownie base is completely cold, drop spoonfuls of the cookie dough over the top. Use a spatula or the back of a spoon to spread the dough into an even layer, covering the entire brownie surface. For the best texture, refrigerate the bars for at least 30 minutes to allow the layers to set. Slice into 16 squares and serve.
