Ingredients
Scale
- 2 lbs Bone-in, skin-on chicken thighs or drumsticks
- 2 lbs Russet or Yukon Gold potatoes, scrubbed and cubed
- 3 tablespoons Vegetable oil or Olive oil
- 1 tablespoon Dried oregano
- 1 tablespoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika (optional, for color)
- Salt and black pepper to taste
- Optional: 1 large onion, sliced into wedges
Instructions
- Step 1: Preparation and Preheating. Preheat your oven to 400°F (200°C). While the oven warms up, wash your potatoes thoroughly to remove any dirt. Cut the potatoes into 1-inch cubes; keeping them uniform ensures they all cook at the same rate. If you are using an onion, peel it and cut it into thick wedges. Pat the chicken pieces dry with a paper towel. Drying the skin is the secret to getting it extra crispy in the oven.
- Step 2: Seasoning the Ingredients. In a large mixing bowl, toss the cubed potatoes and onions with half of the oil, half of the garlic powder, oregano, salt, and pepper. Spread them out onto a large rimmed baking sheet or a deep 9×13 inch baking dish. In the same bowl, coat the chicken pieces with the remaining oil and spices. Ensure each piece of chicken is fully coated in the herb mixture for maximum flavor.
- Step 3: Arranging and Baking. Nestle the seasoned chicken pieces among the potatoes on the baking sheet. Make sure the chicken is skin-side up. Do not overcrowd the pan; if the ingredients are piled too high, they will steam instead of roast. Place the pan in the center rack of the oven. Bake for 40 to 50 minutes. You will know it is done when the potatoes are fork-tender and the chicken reaches an internal temperature of 165°F (74°C) with golden, crispy skin.
- Step 4: Plating and Serving. Remove the pan from the oven and let the meat rest for 5 minutes. This allows the juices to redistribute, ensuring the chicken stays moist. Use a spatula to toss the potatoes in the rendered chicken fat remaining in the pan—this adds incredible depth of flavor. Serve a portion of potatoes alongside one or two pieces of chicken. Garnish with fresh parsley if you have it on hand, and enjoy your delicious, budget-friendly feast.
