Budget Chicken Drumsticks With Roasted Potatoes Under $10

Budget Chicken Drumsticks With Roasted Potatoes Under $10

  • Total Time: 1 hour
  • Diet: Gluten-Free

Ingredients

Scale
  • 8–10 Chicken drumsticks (approx. 2.5 lbs)
  • 2 lbs Russet or Yukon Gold potatoes, scrubbed and cubed into 1-inch pieces
  • 3 tablespoons Vegetable oil or melted lard
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Garlic powder
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Dried oregano or thyme
  • Optional: Fresh parsley for garnish

Instructions

  1. Step 1: Preparation and Preheating: Preheat your oven to 400°F (200°C). Grab a large rimmed baking sheet. If you want even easier cleanup, line the sheet with aluminum foil or parchment paper. Pat the chicken drumsticks dry with paper towels; removing excess moisture is the secret to getting that golden, crispy skin rather than soggy meat.
  2. Step 2: Seasoning the Ingredients: Place the cubed potatoes and the chicken drumsticks into a large mixing bowl. Drizzle the oil over everything. In a small ramekin, mix the salt, pepper, garlic powder, paprika, and dried herbs. Sprinkle the seasoning mix over the chicken and potatoes. Use your hands or large tongs to toss everything thoroughly, ensuring every inch of the chicken and every side of the potato cubes is well-coated in oil and spices.
  3. Step 3: Arranging the Sheet Pan: Spread the potatoes and chicken out onto the prepared baking sheet in a single layer. Try to keep the potatoes from overlapping too much so they can crisp up properly. Arrange the chicken drumsticks so they aren’t touching each other, which allows the hot air to circulate around the skin for maximum crunch.
  4. Step 4: Roasting to Perfection: Slide the baking sheet into the center rack of the oven. Roast for 40 to 45 minutes. At the halfway mark (around 20 minutes), use a spatula to flip the potatoes and turn the drumsticks. This ensures even browning on all sides. The chicken is done when the internal temperature reaches 165°F (74°C) and the potatoes are fork-tender with golden edges.
  5. Step 5: Plating and Serving: Remove the pan from the oven and let the chicken rest for 5 minutes. This resting period allows the juices to redistribute, keeping the meat moist. Transfer the drumsticks and potatoes to a large platter. If you have it on hand, sprinkle with fresh parsley for a pop of color and serve immediately while hot.
