Budget Chicken Quesadilla With Cheese Under $3 Per Serving

Budget Chicken Quesadilla With Cheese Under $3 Per Serving

  • Total Time: 20 minutes
  • Diet: Standard

Ingredients

Scale
  • 8 medium flour tortillas
  • 2 cups cooked chicken, shredded or diced
  • 2 cups shredded Mexican blend cheese (or Monterey Jack)
  • 1 tablespoon taco seasoning
  • 1 tablespoon vegetable oil or butter
  • 1/4 cup diced onions (optional)
  • Salsa and sour cream for serving (optional)

Instructions

  1. Step 1: Season the Chicken. Place your shredded or diced cooked chicken in a medium bowl. Sprinkle the taco seasoning over the meat and toss it thoroughly until every piece is coated. If the chicken feels too dry, add a teaspoon of water or lime juice to help the spices stick. This ensures every bite of your quesadilla is packed with flavor.
  2. Step 2: Assemble the Quesadillas. Lay out four tortillas on a clean flat surface. Distribute half of the shredded cheese evenly across the four tortillas. Layer the seasoned chicken on top of the cheese. If you are using onions, sprinkle them over the chicken now. Top the chicken with the remaining cheese and place the second tortilla on top. This “cheese sandwich” method ensures the chicken stays locked inside as the cheese melts.
  3. Step 3: Griddle to Golden Perfection. Heat a large skillet or griddle over medium heat and add a small amount of oil or butter. Once the pan is hot, carefully place one assembled quesadilla into the skillet. Cook for about 2-3 minutes until the bottom tortilla is golden brown and crispy. Use a large spatula to flip the quesadilla over and cook the other side for another 2 minutes until the cheese is completely melted.
  4. Step 4: Slice and Serve. Remove the quesadilla from the pan and let it rest for one minute on a cutting board. This prevents the cheese from oozing out immediately when you cut it. Use a pizza cutter or a sharp knife to slice the quesadilla into wedges. Serve immediately while hot with your favorite budget-friendly sides like salsa or sour cream.
