Ingredients
Scale
- 1 medium head of green cabbage (about 2 lbs)
- 2 tablespoons extra virgin olive oil or avocado oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon smoked paprika
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup toasted sunflower seeds for crunch
- Optional: Fresh parsley for garnish
Instructions
- Start by removing any wilted or damaged outer leaves from the cabbage head. Place the cabbage on a sturdy cutting board and slice it in half through the core. Cut out the tough inner core in a V-shape. Lay the flat sides down and shred the cabbage into 1/2-inch wide ribbons. Rinse the shredded cabbage in a colander and pat it dry with a clean kitchen towel. Mince your garlic and grate the ginger so they are ready for the pan.
- Place a large skillet or wide pot over medium heat. Add the olive oil and let it shimmer. Toss in the minced garlic and grated ginger. Sauté these for about 1 minute until they become fragrant, but do not let the garlic brown. Stir in the turmeric and smoked paprika. This “blooms” the spices in the oil, which unlocks their full flavor profile and health benefits.
- Add the shredded cabbage to the skillet in batches. It will look like a lot, but it wilts down significantly. Stir the cabbage to coat every ribbon in the golden spice oil. Increase the heat slightly to medium-high and cook for 12 to 15 minutes. Stir occasionally to ensure even cooking. You want the cabbage to be tender with a few slightly charred, caramelized edges for extra depth of flavor.
- Once the cabbage reaches your desired tenderness, turn off the heat. Drizzle the apple cider vinegar over the top and stir well; the acidity brightens the earthy notes of the turmeric. Season generously with salt and pepper. Transfer the mixture to a large serving bowl. Top with toasted sunflower seeds and fresh parsley if you want that extra “2026 Vegetable Year” gourmet touch. Serve hot as a main dish or a hearty side.
