Ingredients
Scale
- 4–6 Chicken Drumsticks (approx. 1.5 lbs)
- 1.5 cups Long-grain white rice, rinsed
- 1 can (15 oz) Black beans or pinto beans, drained and rinsed
- 3 cups Chicken broth (or water with a bouillon cube)
- 1 small Onion, finely diced
- 2 cloves Garlic, minced
- 2 tablespoons Vegetable oil
- 1 tablespoon Smoked paprika
- 1 teaspoon Cumin
- 1 teaspoon Garlic powder
- Salt and black pepper to taste
- Optional: Fresh cilantro or lime wedges for garnish
Instructions
- Preheat your oven to 375°F (190°C). Pat the chicken drumsticks dry with paper towels to ensure the skin gets crispy. In a small bowl, mix the smoked paprika, cumin, garlic powder, salt, and pepper. Rub the chicken legs thoroughly with one tablespoon of oil, then coat them evenly with about half of the spice mixture. Set the chicken aside while you prepare the base.
- In a large 9×13-inch baking dish or a deep oven-safe skillet, combine the rinsed rice, drained beans, diced onion, and minced garlic. Sprinkle the remaining spice mixture over the rice and stir to distribute the flavors. Pour the chicken broth over the rice mixture and give it a gentle stir so the rice sits in an even layer. The liquid should completely submerge the rice and beans.
- Nestle the seasoned chicken drumsticks on top of the rice and liquid. Cover the dish tightly with aluminum foil. Bake in the center rack of the oven for 30 minutes. After 30 minutes, remove the foil and continue baking for another 20 minutes. This allows the liquid to finish absorbing and the chicken skin to turn golden and crispy. Check that the chicken has reached an internal temperature of 165°F (74°C) and the rice is tender before removing from the oven.
- Let the dish rest for 5 minutes after taking it out of the oven. This allows the rice to fluff up and the juices in the chicken to redistribute. Use a fork to fluff the rice and beans around the chicken. Serve each person one or two drumsticks alongside a generous portion of the seasoned rice and beans. Garnish with fresh cilantro or a squeeze of lime juice for a bright, citrusy finish.
- Cook Time: 60 minutes
