Ingredients
Scale
- 8 Chicken drumsticks (approx. 2 lbs)
- 1.5 cups Long-grain white rice
- 1 can (15 oz) Black beans, drained and rinsed
- 3 cups Chicken broth (or water with a bouillon cube)
- 1 Large yellow onion, diced
- 2 tablespoons Vegetable oil
- 1 tablespoon Smoked paprika
- 1 tablespoon Garlic powder
- 1 teaspoon Dried oregano
- Salt and black pepper to taste
- Optional: Fresh cilantro or lime wedges for garnish
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken drumsticks dry with paper towels; this is the secret to getting crispy skin. In a small bowl, mix the smoked paprika, garlic powder, dried oregano, salt, and pepper. Place the chicken in a large bowl, drizzle with one tablespoon of oil, and toss with the spice mixture until every leg is evenly coated. Set these aside while you prep the base.
- Arrange the seasoned chicken legs on a parchment-lined baking sheet or in a large roasting pan. Leave a little space between each piece so the heat can circulate. Slide the tray into the oven and bake for 40 to 45 minutes. You want the internal temperature to reach 165°F and the skin to look golden brown and crispy. If you prefer extra crunch, you can broil them for the final 2 minutes.
- While the chicken is in the oven, heat the remaining tablespoon of oil in a medium pot over medium heat. Sauté the diced onion until translucent, about 5 minutes. Stir in the dry rice and toast it for 2 minutes to enhance the nutty flavor. Add the chicken broth and the drained black beans. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-18 minutes until the liquid is absorbed. Turn off the heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- Scoop a generous portion of the fluffy rice and bean mixture onto each plate. Top with two crispy baked chicken legs. If you have a few cents left in the budget, garnish with fresh cilantro or a squeeze of lime juice to brighten the flavors. Serve immediately while the chicken is hot and the skin is at its crispiest.
- Cook Time: 55 minutes
