Ingredients
Scale
- 14 oz package smoked sausage or kielbasa, sliced into rounds
- 1 small head of green cabbage, chopped into 1-inch pieces
- 2 large Russet potatoes, peeled and diced into small cubes
- 1 medium yellow onion, thinly sliced
- 2 tablespoons vegetable oil or butter
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/4 cup water or chicken broth (optional)
Instructions
- Start by prepping all your ingredients to ensure the cooking process goes smoothly. Peel and dice your potatoes into 1/2-inch cubes; keeping them small ensures they cook at the same rate as the cabbage. Slice the smoked sausage into 1/4-inch rounds. Core the cabbage and chop it into bite-sized squares. Thinly slice the onion so it melts into the dish during the cooking process.
- Place a large skillet or cast-iron pan over medium-high heat and add one tablespoon of oil. Once hot, add the sliced sausage and diced potatoes. Cook for about 8-10 minutes, stirring occasionally, until the sausage is browned and the potatoes have developed a golden-brown crust. The fat rendering from the sausage will help flavor the potatoes perfectly.
- Add the remaining tablespoon of oil to the pan if it looks dry. Toss in the sliced onions and chopped cabbage. Season the mixture with garlic powder, smoked paprika, salt, and black pepper. Stir well to coat the vegetables in the spices and sausage drippings. If the pan seems too hot or the cabbage is sticking, pour in 1/4 cup of water or broth to create steam.
- Reduce the heat to medium and cover the skillet with a lid. Let the mixture cook for another 8-10 minutes, or until the cabbage is tender and the potatoes are soft enough to be pierced with a fork. Give it one final toss to incorporate all the browned bits from the bottom of the pan.
- Remove the pan from the heat. Taste and add extra salt or pepper if needed. Serve the mixture hot directly from the skillet into shallow bowls. This meal is a complete “all-in-one” plate, but you can serve it with a side of yellow mustard for dipping the sausage if desired.
