Chewy Cakey Brownies Espresso Easy Fudgy Stuffed Oreo Loaded Brookie Bars Classic Creative Chocolate Tested

  • Total Time: 55 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 1/2 cup all-purpose flour
  • 1/3 cup high-quality cocoa powder
  • 1/4 teaspoon salt
  • 16–20 Double Stuf Oreo cookies
  • 1 cup chocolate chip cookie dough (homemade or store-bought)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment with non-stick cooking spray or a small amount of butter to ensure the bars release perfectly after cooling.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs one at a time, beating vigorously after each addition. Stir in the vanilla extract and the espresso powder until the powder completely dissolves. Sift in the flour, cocoa powder, and salt. Fold the dry ingredients into the wet mixture using a spatula until just combined. Do not overmix, as this ensures the bars remain chewy rather than tough.
  3. Take your chocolate chip cookie dough and press it into an even layer at the bottom of the prepared baking pan. This serves as the “brookie” foundation. If the dough is sticky, lightly flour your fingers to help spread it evenly into the corners.
  4. Place the Oreo cookies in a single layer over the top of the cookie dough. You should be able to fit about 16 cookies in a 4×4 grid. Press them down slightly into the dough so they stay in place when you pour the next layer.
  5. Pour the brownie batter over the Oreo layer, using a spatula to spread it evenly so all the cookies are covered. Sprinkle the extra semi-sweet chocolate chips over the top. Place the pan in the oven and bake for 30 to 35 minutes. The edges should be set, but a toothpick inserted into the center should come out with a few moist crumbs. Remove from the oven and let the bars cool completely in the pan before lifting the parchment to cut them into squares.
