Ingredients
Scale
- 2 cups cooked chicken, shredded (rotisserie chicken works perfectly)
- 1 tablespoon taco seasoning (store-bought or homemade)
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup chicken broth or water
- 8 small corn tortillas
- 1.5 cups shredded Mexican blend cheese or Monterey Jack
- 2 tablespoons vegetable oil or cooking spray
- Optional toppings: fresh cilantro, diced white onions, sour cream, salsa, and avocado slices
Instructions
- Step 1: Season the Chicken. Place your shredded chicken in a medium mixing bowl. Sprinkle the taco seasoning over the meat and pour in the lime juice and chicken broth. Toss everything together until the chicken is evenly coated and slightly moist. The liquid ensures the chicken stays juicy during the frying process and helps the spices bloom. If you prefer more heat, toss in a pinch of crushed red pepper flakes or a teaspoon of hot sauce at this stage.
- Step 2: Assemble and Fry the Tacos. Heat a large non-stick skillet or griddle over medium heat and add a light coating of oil or cooking spray. Place a corn tortilla in the pan and immediately sprinkle a generous tablespoon of cheese over the entire surface. Once the cheese begins to melt, place a small mound of the seasoned chicken on one half of the tortilla. Carefully fold the tortilla in half using a spatula, pressing down gently to seal it with the melting cheese. Cook for 2 to 3 minutes per side until the shell is golden brown and noticeably crispy.
- Step 3: Garnish and Serve. Remove the crispy tacos from the skillet and place them on a wire rack for one minute to maintain their crunch. Open the taco slightly or pile your favorite toppings right on top. Traditional garnishes like chopped cilantro and white onion add a fresh bite that cuts through the richness of the cheese. Serve immediately while the cheese is still stretchy and the shells are at their peak crispiness.
