Ingredients
Scale
- 24 oz Low-fat cottage cheese
- 8 Large eggs, beaten
- 1 bag (10 oz) Frozen chopped spinach, thawed and squeezed dry
- 1 lb Pre-cooked turkey sausage crumbles or diced ham
- 1 cup Shredded sharp cheddar cheese
- 1 teaspoon Dried oregano
- 1/2 teaspoon Garlic powder
- Salt and black pepper to taste
- Non-stick cooking spray
Instructions
- Generously coat the inside of your slow cooker with non-stick cooking spray to ensure easy cleanup later. In a large mixing bowl, whisk the eight eggs until they are well combined. Stir in the cottage cheese, the squeezed-dry spinach, the pre-cooked turkey sausage or ham, half of the shredded cheddar cheese, oregano, garlic powder, salt, and pepper. Mix everything until the ingredients are evenly distributed.
- Pour the mixture into the prepared slow cooker and spread it out evenly with a spatula. Sprinkle the remaining half cup of cheddar cheese over the top. Cover the slow cooker with the lid. Set the temperature to “Low” and cook for approximately 3.5 to 4 hours. You will know it is done when the center is set and the edges are slightly golden brown. Avoid opening the lid during the first 3 hours to keep the heat trapped inside.
- Turn off the slow cooker and let the casserole rest for about 10 minutes with the lid off; this helps it firm up for easier slicing. Scoop out generous portions onto warm plates. Garnish with a sprinkle of fresh parsley or a dash of red pepper flakes for a festive holiday look. Serve it alongside fresh fruit or a piece of whole-grain toast for a complete, high-protein Christmas brunch.
