Ingredients
Scale
- 12 ounces fresh or frozen cranberries (one standard bag)
- 1 cup granulated sugar
- 1 cup 100% orange juice (pulp-free preferred)
- 1 teaspoon fresh orange zest
- 1 cinnamon stick
- A tiny pinch of salt
- Optional: 1/2 cup water if you prefer a thinner sauce
Instructions
- Step 1: Rinse and Sort the Cranberries
Place your cranberries in a colander and rinse them thoroughly under cold running water. Sort through the berries and discard any that are soft, shriveled, or bruised. This ensures your sauce has the best texture and a clean, bright flavor. Once cleaned, let them drain for a minute while you prepare your pot. - Step 2: Combine and Dissolve
In a medium saucepan, combine the sugar, orange juice, and the cinnamon stick. Turn the heat to medium-high and stir occasionally. Continue heating until the sugar completely dissolves and the liquid reaches a gentle boil. This creates the sweet base that will mellow the natural tartness of the cranberries. - Step 3: Simmer and Pop
Add the rinsed cranberries to the saucepan. Bring the mixture back to a boil, then immediately reduce the heat to low. Let the sauce simmer gently for about 10 to 12 minutes. You will hear the cranberries begin to “pop”—this is the skin bursting as the fruit softens. Stir occasionally to prevent sticking. Once most of the berries have popped and the liquid has thickened slightly, remove the pan from the heat. - Step 4: Season and Cool
Stir in the orange zest and a tiny pinch of salt. The salt might seem strange for a sweet dish, but it actually enhances the fruit flavors. Remove and discard the cinnamon stick. Transfer the sauce to a glass bowl. The sauce will look a bit runny while hot, but it will thicken significantly as it cools. Let it sit at room temperature for 30 minutes before placing it in the refrigerator to chill completely.
