Classic Overnight Oats Lemon Easy 5 Minute Breakfast Meal Prep

  • Total Time: 5 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1/2 cup rolled oats (old-fashioned oats)
  • 2/3 cup milk of choice (dairy, almond, oat, or soy)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Step 1: Preparation Find a clean mason jar or a resealable glass container. Add the rolled oats, chia seeds, lemon zest, and a pinch of salt to the jar. Using a dry spoon, stir these dry ingredients together to ensure the chia seeds are evenly distributed. This prevents the seeds from clumping together once you add the liquid.
  2. Step 2: Mixing the Base Pour in your milk of choice, Greek yogurt, lemon juice, maple syrup, and vanilla extract. Use a long spoon to stir the mixture vigorously. Make sure you reach the bottom corners of the jar to incorporate all the dry oats. The mixture should look slightly liquidy, as the oats and chia seeds will absorb much of the moisture overnight.
  3. Step 3: Chilling and Setting Seal the lid tightly on the jar. Place the container in the refrigerator for at least 4 hours, though overnight (about 8 hours) is best for the creamiest texture. In the morning, give the oats a quick stir. If the mixture is too thick for your liking, splash in a little extra milk. Garnish with fresh lemon slices or extra zest before serving.
