Cottage Cheese Bagel Egg Bites 20g+ Protein Easy High Protein Breakfast

  • Total Time: 35 minutes
  • Diet: High-Protein, Low-Carb

Ingredients

Scale
  • 6 large eggs
  • 1 cup low-fat cottage cheese (2% or 4% work best)
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons Everything Bagel seasoning
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh spinach, finely chopped
  • 1/4 cup cooked bacon bits or turkey sausage (optional)
  • Non-stick cooking spray

Instructions

  1. Start by preheating your oven to 350°F (175°C). While the oven heats, grab a high-speed blender or food processor. Add the 6 eggs and 1 cup of cottage cheese into the blender. Pulse until the mixture is completely smooth and airy. This step is crucial because it incorporates air into the eggs and eliminates the “curdy” texture of the cottage cheese. Lightly grease a silicone muffin tin or a standard metal muffin tin with non-stick spray. If you are using a metal tin, consider using paper liners to prevent sticking.
  2. Pour the blended egg and cottage cheese mixture into a large mixing bowl. Fold in the shredded cheddar cheese, chopped spinach, pepper, and your choice of protein like bacon or turkey sausage. Stir gently until the ingredients are evenly distributed. Use a measuring cup to pour the mixture into the muffin slots, filling each about 3/4 of the way full. Generously sprinkle the Everything Bagel seasoning over the top of each bite. Place the tin in the oven and bake for 22 to 25 minutes. The egg bites should be set in the middle and slightly golden on the edges.
  3. Remove the muffin tin from the oven and let the egg bites rest for at least 5 minutes. They will deflate slightly as they cool, which is normal. If you used a silicone mold, simply pop them out from the bottom. If using a metal tin, run a thin knife around the edges to loosen them. Serve two to three bites per plate for a high-protein meal. Pair them with a side of fresh fruit or a slice of avocado for a well-rounded breakfast. Store any leftovers in an airtight container in the refrigerator for up to four days.
