Ingredients
Scale
- 16 oz Low-fat or full-fat cottage cheese
- 2 tablespoons Honey or maple syrup
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Almond extract (this is the secret to the birthday cake flavor!)
- 1 scoop Vanilla protein powder (optional, for extra protein)
- 2 tablespoons Rainbow sprinkles
- 1/4 cup Crushed graham crackers or yellow cake mix (optional for texture)
Instructions
- Begin by gathering all your ingredients and equipment. You will need a high-speed blender or a food processor to ensure the cottage cheese becomes completely smooth. Take your cottage cheese directly from the refrigerator; keeping it cold helps the freezing process later. Measure out your sweetener and extracts so you are ready to mix quickly.
- Place the cottage cheese, honey, vanilla extract, almond extract, and protein powder into the blender. Pulse the mixture on high until the curds have completely disappeared and the texture is silky smooth. Once blended, pour the mixture into a shallow, freezer-safe container. Gently fold in the rainbow sprinkles and crushed graham crackers using a spatula to distribute them evenly without streaking the colors.
- Smooth the top of the mixture with your spatula and add a few extra sprinkles for a beautiful presentation. Cover the container with a lid or plastic wrap and place it in the freezer. Let it set for about 3 to 4 hours. For the best consistency, take the ice cream out 10 to 15 minutes before serving to let it soften slightly. Scoop it into bowls and enjoy your high-protein treat!
