Ingredients
Scale
- 1 cup low-fat cottage cheese
- 2 tablespoons maple syrup or honey
- 1 ½ cups almond flour (or 1 cup almond flour and 1 scoop of vanilla protein powder)
- Optional: 1/4 cup mini dark chocolate chips (standard for the “viral” look)
Instructions
- Step 1: Blend the Base
Place your cottage cheese and maple syrup into a high-speed blender or food processor. Blend the mixture on high until it is completely smooth and creamy. You want to eliminate all the curds until the consistency resembles a thick yogurt or heavy cream. This is the secret to getting that authentic “dough” feel without any lumps. - Step 2: Mix the Dough
Transfer the blended cottage cheese mixture into a medium-sized mixing bowl. Gradually fold in the almond flour (and protein powder, if using). Use a spatula to stir the ingredients together until a thick, scoopable dough forms. If the mixture feels too wet, add another tablespoon of almond flour until you reach your desired consistency. - Step 3: Fold and Chill
Gently fold in your chocolate chips or any other preferred mix-ins using a spoon. While you can eat this immediately, placing the dough in the refrigerator for about 15 to 20 minutes allows it to firm up, making the texture even more like traditional cookie dough. Scoop it into small bowls and enjoy your high-protein snack!
