Cottage Cheese Crack Chicken Crockpot

Cottage Cheese Crack Chicken Crockpot

  • Total Time: 4 hours 10 minutes
  • Diet: High-protein, Low-carb, Gluten-free

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 packet (1 oz) dry Ranch seasoning mix
  • 1 cup low-fat cottage cheese (blended until smooth)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits (crispy)
  • 1/4 cup chopped green onions
  • 1/4 cup chicken broth or water
  • 1/2 teaspoon garlic powder
  • Black pepper to taste

Instructions

  1. Start by placing the raw chicken breasts at the bottom of your slow cooker in a single layer. Sprinkle the ranch seasoning packet and garlic powder evenly over the top of the chicken. Pour in the chicken broth or water around the sides of the chicken to ensure there is enough moisture for the cooking process. Cover the crockpot with the lid.
  2. Set your crockpot to cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours. You want the chicken to be tender enough to shred easily with a fork. While the chicken cooks, place your cottage cheese into a blender or food processor and blend until it is completely smooth and creamy. This step is crucial for achieving that “crack chicken” consistency without any lumps.
  3. Once the chicken is fully cooked, remove it from the crockpot and place it in a large bowl. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir in the blended cottage cheese, shredded cheddar cheese, and half of the bacon bits. Stir well until the cheese has melted and the chicken is thoroughly coated. Garnish with the remaining bacon bits and fresh green onions before serving.
