Ingredients
Scale
- 1 cup low-fat or full-fat cottage cheese (Good Culture recommended for best flavor)
- 1 scoop (30g) vanilla or chocolate whey/casein protein powder
- 1 tablespoon unsweetened cocoa powder (if making chocolate flavor)
- 1–2 tablespoons calorie-free sweetener or maple syrup (adjust to taste)
- 1/2 teaspoon pure vanilla extract
- Optional: 1 tablespoon almond milk (only if needed for blending)
- Toppings: Fresh berries, dark chocolate chips, or crushed nuts
Instructions
- Step 1: Combine the Ingredients. Place the cottage cheese, protein powder, sweetener, vanilla extract, and cocoa powder (if using) into a high-speed blender or a small food processor. If you prefer a thinner consistency, you can add a splash of almond milk at this stage, but start with very little to keep the mousse thick and airy.
- Step 2: Blend Until Silky Smooth. Pulse the mixture several times to break up the curds, then blend on high for about 30 to 45 seconds. Stop and scrape down the sides with a spatula to ensure every bit of cottage cheese is processed. Continue blending until the mixture is completely smooth and looks like a thick pudding or mousse.
- Step 3: Chill and Serve. Transfer the mousse into a serving bowl or a meal prep container. While you can eat it immediately, the texture improves significantly if you let it chill in the refrigerator for at least 30 minutes. This allows the protein powder to hydrate and the mousse to firm up. Before serving, garnish with your favorite low-carb toppings like fresh strawberries or a sprinkle of hemp seeds.
