Cottage Cheese Oatmeal High Protein 20g No Powder

Cottage Cheese Oatmeal High Protein 20g No Powder

  • Total Time: 7 minutes
  • Diet: Vegetarian, High-Protein

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 1 cup water (or unsweetened almond milk for extra creaminess)
  • 1/2 cup low-fat or 2% cottage cheese
  • 1 tablespoon chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon maple syrup or honey (optional)
  • A pinch of salt
  • Fresh berries or sliced banana for topping

Instructions

  1. Gather all your ingredients and a small saucepan. Measure out your rolled oats and liquid. If you prefer a smoother texture, you can pulse the cottage cheese in a blender for 10 seconds before starting, though most people enjoy the slight texture it adds when stirred in whole. Set aside your toppings so they are ready to go as soon as the oats are hot.
  2. Place the saucepan over medium-high heat. Add the oats, water (or milk), chia seeds, cinnamon, and a pinch of salt. Bring the mixture to a gentle boil, then reduce the heat to low. Simmer the oats for about 5 to 7 minutes, stirring occasionally, until the liquid is mostly absorbed and the oats are soft and thick. Remove the pan from the heat immediately to prevent the oats from becoming too dry.
  3. Now for the magic step: fold the cottage cheese into the hot oatmeal. Stir vigorously for about 30 seconds until the cheese is well-incorporated and the mixture looks creamy. The residual heat will warm the cottage cheese without making it rubbery. Transfer the oatmeal to a bowl. Top with your favorite fresh fruit, a drizzle of maple syrup, or a sprinkle of nuts. Serve immediately while warm and delicious.
