Ingredients
Scale
- 1/2 cup old-fashioned rolled oats (certified gluten-free if needed)
- 1/2 cup low-fat cottage cheese
- 1/2 cup unsweetened almond milk or milk of choice
- 1 tablespoon chia seeds
- 1 tablespoon pure maple syrup or honey
- 1/2 teaspoon vanilla extract
- A pinch of sea salt
- Optional toppings: Fresh berries, sliced almonds, or a dash of cinnamon
Instructions
- In a mason jar or a small glass container, add the rolled oats, cottage cheese, chia seeds, and sea salt. Pour in the milk, maple syrup, and vanilla extract. Use a spoon to stir everything together vigorously. Ensure that the chia seeds are well-distributed and not clumped at the bottom, as this ensures an even soak.
- If you prefer a texture similar to traditional pudding rather than chunky oats, place all the ingredients into a high-speed blender instead of a jar. Pulse for 20-30 seconds until the cottage cheese curds and oats are smooth. Pour the mixture back into your jar or container.
- Seal the container with a tight-fitting lid. Place the jar in the refrigerator for at least 4 hours, though overnight is best for the creamiest results. During this time, the oats and chia seeds absorb the liquid, creating a thick and satisfying consistency.
- In the morning, give the oats a quick stir. If the mixture is too thick, splash in an extra tablespoon of milk. Add your favorite toppings like fresh strawberries, blueberries, or a drizzle of nut butter. Eat it cold straight from the jar or transfer it to a bowl.
- Cook Time: 5 minutes
