Ingredients
Scale
- 6 Large eggs
- 1 Cup low-fat or 2% cottage cheese
- 1/2 Cup shredded cheddar cheese (or salt/pepper seasoning blend)
- Optional: Non-stick cooking spray
Instructions
- Preheat your oven to 350°F (175°C). Generously grease a standard 6-slot muffin tin with non-stick cooking spray or use silicone muffin liners. Silicone is highly recommended here because these high-protein bites tend to stick to metal pans very easily.
- Add the six eggs and the one cup of cottage cheese into a blender. If you are using a seasoning blend instead of shredded cheese, add it now. Blend on high for about 20-30 seconds until the mixture is completely smooth and frothy. Blending is the secret to getting that sous-vide texture at home.
- Distribute the egg mixture evenly among the muffin cups, filling each about 3/4 of the way full. If you are using shredded cheese, sprinkle a little bit on top of each cup. Place the tin in the center rack of the oven and bake for 22 to 25 minutes. The bites should be set in the middle and slightly golden on the edges.
- Allow the egg bites to cool in the pan for 5 minutes before removing them. To create your protein box, place two egg bites in a meal prep container. Add a side of fresh fruit, a handful of almonds, or a few slices of turkey bacon to complete the high-protein meal. Store in the refrigerator for up to 4 days.
- Cook Time: 30 minutes
