Ingredients
Scale
- 1/2 cup old-fashioned rolled oats
- 1/2 cup low-fat or full-fat cottage cheese
- 1/3 cup unsweetened almond milk (or milk of choice)
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- A pinch of sea salt
- Optional: Fresh berries, sliced bananas, or nut butter for topping
Instructions
- Step 1: Blend the Base
For the smoothest, most cheesecake-like consistency, place the cottage cheese, milk, maple syrup, vanilla extract, and salt into a blender. Blend on high for 30 seconds until the mixture is completely smooth and no curds remain. If you prefer a chunkier texture, you can skip the blender and simply whisk these ingredients together in a bowl. - Step 2: Mix the Dry Ingredients
In a mason jar or a small glass container, combine the rolled oats and the chia seeds. Stir them briefly to ensure the chia seeds are evenly distributed, which prevents them from clumping together once the liquid is added. - Step 3: Combine and Chill
Pour the blended cottage cheese mixture over the oats and chia seeds. Stir well with a spoon until every oat is submerged. Secure the lid on your container and place it in the refrigerator for at least 4 hours, though overnight is best for the creamiest results. In the morning, give it a quick stir, add your favorite toppings, and enjoy!
