Ingredients
Scale
- 1/2 cup Low-fat or 2% Cottage Cheese
- 1/2 cup Rolled oats (or oat flour)
- 2 Large eggs
- Optional: A pinch of cinnamon or a drop of vanilla extract for extra flavor
Instructions
- Place the cottage cheese, oats, and eggs into a high-speed blender or food processor. Blend the mixture on high for about 30 to 45 seconds until the batter is completely smooth and the oats have fully broken down. If you prefer a chunkier, more rustic texture, you can simply whisk the ingredients together in a bowl, though the blender method provides the most traditional pancake consistency. Let the batter rest for 2 minutes to allow the oats to hydrate and thicken slightly.
- Heat a non-stick skillet or griddle over medium-low heat. Lightly coat the surface with cooking spray or a small amount of butter. Pour approximately 1/4 cup of batter onto the hot surface for each pancake. Cook for 3 to 4 minutes on the first side. Look for small bubbles forming on the edges and a slightly matte appearance on the surface before flipping. Carefully flip the pancakes and cook for an additional 2 to 3 minutes until both sides are golden brown and the center is set.
- Stack the warm pancakes onto a plate. Top them with your favorite healthy additions like fresh berries, a dollop of Greek yogurt, or a drizzle of sugar-free maple syrup. Serve immediately while they are hot and fluffy.
- Cook Time: 15 minutes
