Cottage Cheese Slow Cooker Chicken Healthy High Protein

Cottage Cheese Slow Cooker Chicken Healthy High Protein

  • Total Time: 4 hours 10 minutes
  • Diet: Gluten-free, Low-carb

Ingredients

Scale
  • 1.5 lbs Boneless Skinless Chicken Breasts
  • 1.5 cups Low-fat or Full-fat Cottage Cheese
  • 1/2 cup Low-sodium Chicken Broth
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Oregano
  • 1/2 tsp Smoked Paprika
  • Salt and Pepper to taste
  • 2 cups Fresh Baby Spinach (optional)
  • 1/4 cup Freshly Grated Parmesan Cheese

Instructions

  1. Season and Prepare the Chicken: Place the chicken breasts at the bottom of your slow cooker. Sprinkle both sides of the chicken with garlic powder, onion powder, dried oregano, smoked paprika, salt, and pepper. Use your hands or a spoon to ensure the seasoning evenly coats the meat. Pour the chicken broth around the base of the chicken to provide moisture during the initial cooking phase.
  2. Slow Cook to Perfection: Cover the slow cooker with its lid and set the temperature to Low. Cook the chicken for 3 to 4 hours. You want the chicken to reach an internal temperature of 165°F (74°C). Avoid cooking on High if possible, as the lower temperature ensures the chicken remains tender and easy to shred later.
  3. Create the Creamy Sauce: Once the chicken is cooked through, remove it from the slow cooker and place it on a clean plate. In a blender or food processor, combine the cottage cheese and the liquid remaining in the slow cooker pot. Blend until completely smooth. Pour this mixture back into the slow cooker and stir in the Parmesan cheese. If you are using spinach, add it now so it can wilt in the residual heat.
  4. Shred and Combine: Use two forks to shred the cooked chicken breasts into bite-sized pieces. Add the shredded chicken back into the creamy sauce in the slow cooker. Stir everything together until the chicken is thoroughly coated. Let it sit for 5-10 minutes on the “Warm” setting to allow the flavors to meld together.
  5. Plating: Serve the creamy chicken over a bed of zucchini noodles, steamed broccoli, or whole-grain pasta. Garnish with a sprinkle of fresh parsley or an extra dusting of Parmesan cheese. Enjoy your high-protein, guilt-free masterpiece!
