Cottage Cheese S'mores Brownies High Protein Low Carb

Cottage Cheese S’mores Brownies High Protein Low Carb

  • Total Time: 35 minutes
  • Diet: Low-Carb, High-Protein

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/2 cup granulated monk fruit sweetener (or erythritol)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup chocolate protein powder (whey-casein blend works best)
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 cup sugar-free dark chocolate chips
  • 1/2 cup sugar-free mini marshmallows
  • 2 low-carb graham crackers, crushed into chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving a slight overhang on the sides for easy removal. Spray the parchment lightly with non-stick cooking spray to ensure the brownies release perfectly.
  2. Place the cottage cheese, eggs, monk fruit sweetener, and vanilla extract into a high-speed blender or food processor. Blend on high until the mixture is completely smooth and creamy. There should be no visible curds remaining. This step is crucial for achieving that fudgy brownie texture.
  3. Pour the blended cottage cheese mixture into a large mixing bowl. Sift in the cocoa powder, chocolate protein powder, almond flour, and baking powder. Using a spatula, gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix, as this can make the protein powder “tough.”
  4. Fold in half of the chocolate chips. Pour the batter into the prepared baking pan and spread it evenly with your spatula. Sprinkle the remaining chocolate chips, the mini marshmallows, and the crushed graham cracker chunks over the top. Press them down slightly into the batter so they stick.
  5. Place the pan in the center rack of the oven. Bake for 22–25 minutes. The edges should be set, but the center should still have a slight jiggle. Do not overbake! The marshmallows will toast and turn golden brown during the final few minutes.
  6. Remove the brownies from the oven and let them cool completely in the pan for at least 30 minutes. This is the hardest part, but cooling allows the structure to set. Lift the brownies out using the parchment paper edges and slice into 9 even squares. Serve immediately or store for later.
