Ingredients
Scale
- 1 cup low-fat or full-fat cottage cheese
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 cup almond flour (or oat flour for a different texture)
- 1 scoop vanilla or peanut butter protein powder
- 1/4 cup roasted peanuts, chopped
- 2 tablespoons mini dark chocolate chips
- 1 tablespoon creamy peanut butter (melted for drizzling)
- A pinch of sea salt
Instructions
- Place the cottage cheese, maple syrup, and vanilla extract into a high-speed blender or food processor. Blend on high until the mixture is completely smooth and creamy. You want to ensure there are no lumps remaining from the cottage cheese curds so it resembles a thick custard.
- Transfer the smooth cottage cheese mixture into a medium-sized mixing bowl. Add the almond flour and the scoop of protein powder. Use a spatula to fold the dry ingredients into the wet base until a thick, dough-like consistency forms. If the mixture is too wet, add another tablespoon of almond flour.
- Add the chopped roasted peanuts and mini chocolate chips to the bowl. Fold them in gently so they are evenly distributed throughout the dough. The peanuts provide that essential Snickers crunch, while the chocolate adds richness.
- Divide the cookie dough into two bowls. Drizzle the melted peanut butter over the top and sprinkle with a tiny pinch of sea salt to enhance the caramel-like flavors. You can eat it immediately or let it chill in the fridge for 30 minutes to firm up even more.
