Ingredients
Scale
- 1 slice of high-protein sprouted grain or sourdough bread
- 1/2 cup low-fat or whole milk cottage cheese
- 2 large eggs
- Optional: Salt, black pepper, and Everything Bagel seasoning for garnish
Instructions
- Preheat your oven to 350°F (175°C) or set your air fryer to 320°F. Lightly grease two slots in a silicone muffin tin or use non-stick cooking spray. In a small bowl, crack the two eggs and whisk them vigorously with a pinch of salt and pepper until the yolks and whites are fully combined and slightly frothy. If you want even fluffier bites, you can add a tablespoon of the cottage cheese directly into the egg mixture before whisking.
- Pour the whisked egg mixture evenly into the two prepared muffin slots. Bake in the oven for 12-15 minutes, or in the air fryer for 8-10 minutes, until the eggs are set and slightly golden on top. While the egg bites are cooking, place your slice of bread in the toaster. Toast it until it reaches your desired level of golden-brown crunchiness. A firmer toast works best to support the weight of the toppings.
- Spread the 1/2 cup of cottage cheese evenly across the warm toast. Use the back of a spoon to create a slight well in the center. Carefully remove the egg bites from the tin and place them directly on top of the cottage cheese layer. Sprinkle with Everything Bagel seasoning or extra cracked pepper. Serve immediately while the toast and egg bites are still warm.
- Cook Time: 20 minutes
