Ingredients
Scale
- 1 cup low-fat cottage cheese (small curd works best)
- 4 large eggs
- 1/2 teaspoon garlic powder or Everything Bagel seasoning
- Optional: 1/4 cup shredded cheddar cheese
- Optional: Handful of chopped spinach or bell peppers
Instructions
- Preheat your oven to 375°F (190°C). Line a small baking sheet with parchment paper for the wrap, or grease a silicone muffin tin for the egg bites. If you are making the wrap, ensure the parchment paper is flat to prevent the mixture from leaking underneath.
- Place the cottage cheese, eggs, and seasonings into a high-speed blender. Blend on medium speed for about 30 seconds until the mixture is completely smooth and bubbly. If you want a thicker wrap, you can add one tablespoon of almond flour at this stage, though it is not strictly necessary for the 3-ingredient version.
- For the wrap: Pour the mixture onto the lined baking sheet and spread it into a thin, even rectangle. Bake for 20 to 25 minutes until the edges are golden brown and the center is firm. For the egg bites: Pour the mixture into the muffin tin slots, filling them about 3/4 full. Bake for 15 to 20 minutes until they have puffed up and set.
- Let the wrap cool for 5 minutes before carefully peeling it away from the parchment paper. If making the bites, let them rest for 2 minutes before popping them out. Fill your wrap with the egg bites, extra greens, or some avocado, roll it up tightly, and slice it in half to serve.
- Cook Time: 35 minutes
