Cranberry Sauce Storage Hack No Watery

Cranberry Sauce Storage Hack No Watery

  • Total Time: 20 minutes
  • Diet: Vegan, Vegetarian, Gluten-Free

Ingredients

Scale
  • 12 oz fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1/2 cup orange juice (freshly squeezed is best)
  • 1/2 cup water
  • 1 teaspoon orange zest
  • 1/4 teaspoon salt
  • 1 teaspoon cornstarch dissolved in 1 tablespoon cold water (The “Hack” Ingredient)

Instructions

  1. Step 1: Washing and Sorting
Rinse your cranberries thoroughly in cold water. Pick through them and discard any berries that are mushy, shriveled, or brown. Place the cleaned berries in a medium saucepan. Adding a pinch of salt at this stage helps balance the tartness and prepares the skins to burst evenly.
  2. Step 2: Simmering the Base
Add the sugar, orange juice, and water to the saucepan with the berries. Turn the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 10 to 12 minutes. You will hear the berries “pop” as they break down. Stir occasionally to prevent the sugar from scorching on the bottom of the pan.
  3. Step 3: The Thickening Hack
While the sauce is simmering, whisk your cornstarch and cold water together to create a smooth slurry. Slowly pour this into the bubbling sauce while stirring constantly. Let it cook for another 2 minutes. This creates a stable matrix that prevents water from separating during refrigeration. Stir in the orange zest during the final minute of cooking for maximum fragrance.
  4. Step 4: The Storage Seal
Remove the pan from the heat and let it sit for 10 minutes. Transfer the sauce into a glass storage container. Here is the secret: take a piece of plastic wrap and press it directly onto the surface of the warm sauce so there is no air gap. This prevents a skin from forming and stops condensation from dripping back into the sauce, which is the primary cause of wateriness. Once cooled to room temperature, put the lid on and refrigerate.
