Ingredients
Scale
- 1 medium head of green cabbage (approx. 2 lbs)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 cup finely grated Parmesan cheese
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly cracked black pepper
- Optional: Fresh parsley for garnish
Instructions
- Start by removing the loose or wilted outer leaves from the cabbage head. Place the cabbage on a sturdy cutting board and slice it into “steaks” about 3/4 to 1 inch thick. Make sure to keep the core intact for each slice, as this holds the leaves together. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
- Lay the cabbage steaks on a flat surface or a baking sheet. Using a pastry brush, coat both sides of each steak generously with the seasoned oil mixture. Ensure the oil seeps slightly into the layers for maximum flavor. Once coated, sprinkle half of the Parmesan cheese evenly over the tops of the steaks, pressing it down slightly so it sticks to the oil.
- Preheat your air fryer to 375°F (190°C) for 3 minutes. Carefully place the seasoned cabbage steaks into the air fryer basket in a single layer. Do not overlap them; you may need to work in batches depending on the size of your air fryer. Cook for 10 minutes. Open the basket, carefully flip each steak using a spatula, and sprinkle the remaining Parmesan cheese on the other side. Cook for another 5 to 7 minutes until the edges are dark brown and crispy and the centers are fork-tender.
- Remove the cabbage steaks from the air fryer using a wide spatula to prevent them from falling apart. Transfer them to a serving platter immediately while they are hot and the cheese is crispy. Garnish with a sprinkle of fresh parsley if desired. Serve as a main vegetarian course or a delicious side dish alongside grilled chicken or fish.
