Ingredients
Scale
- 1 large head of green cabbage (approximately 2 lbs)
- 3 tablespoons olive oil or avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
- Optional: 2 tablespoons grated Parmesan cheese or nutritional yeast
- Optional: Fresh parsley for garnish
Instructions
- Start by removing any loose or wilted outer leaves from the cabbage. Place the cabbage on a sturdy cutting board and slice it into “steaks” about 1 inch thick. Aim for 4 to 6 thick slices depending on the size of the head. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Use a pastry brush to coat both sides of each cabbage steak generously with the seasoned oil mixture. Ensure the oil gets into the crevices of the leaves for maximum flavor.
- Preheat your air fryer to 375°F (190°C) for 3 minutes. Place the cabbage steaks in the air fryer basket in a single layer. Do not overlap them; if your air fryer is small, cook in two batches. Air fry for 12 to 15 minutes. At the halfway mark (around 7 minutes), carefully flip the steaks using a wide spatula. The cabbage is done when the outer edges are dark brown and crispy, and the center is fork-tender.
- Remove the steaks carefully from the air fryer to keep them intact. If using, sprinkle the hot cabbage immediately with grated Parmesan cheese or nutritional yeast so it melts slightly. Garnish with fresh parsley or a squeeze of lemon juice. Serve these hot as a main dish alongside some quinoa or as a side dish to your favorite protein.
- Cook Time: 25 minutes
