Ingredients
Scale
- 1 medium head of green cabbage
- 3 tablespoons olive oil (or avocado oil)
- 2 tablespoons everything bagel seasoning (sesame seeds, sea salt, dried garlic, dried onion, poppy seeds)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat to prevent sticking. Remove any wilted outer leaves from the cabbage. Place the cabbage on a cutting board and slice it into 1-inch thick rounds, or “steaks.” Try to keep the core intact for each slice to help the steaks hold their shape during cooking.
- Arrange the cabbage slices in a single layer on the prepared baking sheet. In a small bowl, whisk together the olive oil, garlic powder, and smoked paprika. Brush both sides of each cabbage steak generously with the oil mixture. Sprinkle the everything bagel seasoning evenly over the tops, pressing it slightly into the cabbage so it sticks. Bake for 20 to 25 minutes, or until the edges are dark golden brown and the centers are fork-tender.
- For extra crispiness, turn on the broiler for the last 2 minutes of cooking, watching closely to ensure they don’t burn. Remove the tray from the oven and let the steaks rest for a minute. Transfer them carefully to a serving platter using a wide spatula. Squeeze fresh lemon juice over the top to brighten the flavors and garnish with chopped parsley if desired. Serve immediately while hot and crispy.
