Crocktober Chili Crockpot High Protein Feeds Crowd Under $20 No Prep

  • Total Time: 6 hours 5 minutes
  • Diet: High Protein

Ingredients

Scale
  • 2 lbs Lean Ground Turkey or Ground Beef (90/10 or 93/7)
  • 2 cans (15 oz) Kidney Beans, drained and rinsed
  • 1 can (15 oz) Black Beans, drained and rinsed
  • 1 can (15 oz) Pinto Beans, drained and rinsed
  • 2 cans (14.5 oz) Diced Tomatoes with Green Chilies (do not drain)
  • 1 can (15 oz) Tomato Sauce
  • 1 bag (10 oz) Frozen Diced Onions
  • 2 packets Low-Sodium Chili Seasoning Mix
  • 1 cup Frozen Sweet Corn
  • 1 cup Water or Beef Broth

Instructions

  1. Place the raw ground meat at the very bottom of your 6-quart or larger crockpot. Use a spoon to break it into large chunks so it cooks evenly. Pour the frozen diced onions directly over the meat. Add the drained kidney beans, black beans, pinto beans, and frozen corn on top of the meat and onion layer. This layering ensures the meat stays moist while it cooks.
  2. Empty both cans of diced tomatoes (including the liquid) and the can of tomato sauce over the bean mixture. Sprinkle both packets of chili seasoning evenly across the top. Pour in one cup of water or beef broth. Do not stir the mixture yet; leaving the liquids on top allows the flavors to seep down through the layers as the slow cooker heats up.
  3. Cover the crockpot with its lid. Set the temperature to LOW and cook for 6 to 8 hours, or set it to HIGH and cook for 3 to 4 hours. If you are using raw meat, the low setting is preferred to ensure the meat stays tender and the flavors fully meld together. You will know it is done when the meat is fully browned and the onions are translucent.
  4. Once the cooking time is complete, remove the lid and use a sturdy spoon or a meat masher to break the ground meat into small crumbles. Stir everything together thoroughly to combine the beans, meat, and spices. Taste the chili and add salt or pepper if desired. Serve immediately in large bowls with your favorite toppings.
